304 or 316 stainless — how do I choose?
304 covers most general food, pharmaceutical, and dairy applications and is the default. Step up to 316 when chlorides are present: marine/coastal environments, salt-rich processing (brine, pickling, cured meat), or chlorinated wash chemistries. 316 costs ~25-40% more than 304 and is non-negotiable in those environments — 304 will pit and fail.
